We fry the onion. When the oil is ready (fuming), we pour the chopped onion and the garlic clove in.
We let the onion cook without burning it.
Stir it occasionally so it won't stick to the pan. Use, if possible, a wooden cooking spoon. In case you over cook it, it is better if you throw it away and start all over again.
