CHICKEN, HAM AND PEPPERMINT CROQUETTES (2).

In a frying pan, heat the oil using moderate heat. Chop the onion. When the oil is ready (fumes coming out from it), add the chopped onion. The onion can be cut by hand with a knife, or you can use a food processor for a more precise result.

We are using a wooden mixing spoon because it is the best material that won't ruin the frying pan. We stir the onion every now and then. We fry it until it reaches a light golden colour.
