The proportion of milk we will pour is this: three glasses of milk for every glass of flour. If we want our dough to be smoother or softer, the proportion would need to be 4 glasses for every glass of flour. Remember, we are using a glass of 250 cc as reference.

We add the milk using low heat. We need to stir the dough we have formed with all the ingredients constantly, non stop. This is fundamental: if we stopped stirring, our dough would burn and we would have ruined all our work. This is definitely the hardest part of preparing our croquettes: please, don't forget this.
